Recipe of the week: Chicken Zuccini Noodle Caprese

This delicious Chicken Zucchini Noodle Caprese can be made in only 30 minutes, faster if you have a spiralizer! (We recommendthis one) Not one for kitchen gadgets? Simply sub in broccoli slaw from any grocery story or head to Whole Foods for pre-cut zucchini noodles.

A note from your friends at KINETIC: be careful not to cook the zucchini more than 2 minutes as it will get too soft and become watery.

This will make enough for two, but is very easy to double or even triple depending on how many mouths you have to feed. With the zucchini noodles replacing traditional pasta, this is a very low-carb but flavorful, delicious dinner that also makes for an affordable, healthy packed lunch the next day!
